AIP Granola

Ingredients

  • 3 cups Coconut flakes
  • 1 cup Earth’s Bounty Raisins
  • 1 cup Apple Rings (finely chopped)
  • 1/2 cup Earth’s Bounty Apricots (finely chopped)
  • 2 large Ripe bananas
  • 3 tbsp coconut oil
  • 1 tbsp cinnamon
  • 1 tbsp Ginger
  • Sprinkle sea salt

Method

    1. In a large bowl mix together the coconut flakes and dried fruit.
    2. In a separate bowl mash the banana until smooth and creamy then add in the coconut oil and spices.
    3. Coat the coconut flakes and dried fruit with the wet mixture until well combined and sticking together.
    4. Spread out evenly on a prepared baking tray and bake for approximately 35 minutes stirring halfway until the granola is golden brown.
    5. Let cool for 15 minutes before transferring to a glass container. Use within 2 weeks.
