This chocolate mousse cake will have you salivating at the mouth. It’s super gut healing with the addition of slippery elm powder which makes the consistency even more “mousse-like”. Slippery elm is also healing for the gut as it’s a high antioxidant food that can relieve inflammatory bowel conditions, making it a great addition to any gut healing diet.
The recipe is also low allergen meaning no gluten, no grains, no dairy and no refined sugar.
I use only the best nuts and dried fruit from Earth’s Bounty. Enjoy!!

Ingredients
For the filling
- 2 cups Earth’s Bounty raw cashews
- 1 cup raw cocoa powder
- 1 cup coconut cream
- 1/2 cup coconut oil
- 1 tbsp vanilla essence
- 1 tbsp raw honey or pure maple syrup
- 1 tbsp slippery elm powder
For the base
- 3 cups Earth’s Bounty LSA
- 3 cups Earth’s Bounty dates
- 2 cups desiccated coconut
- 1/2 cup coconut oil
Servings: 8 people
Instructions
For the base:
- Blend all ingredients together until it sticks together when squished in the palm of your hands and can easily be pressed into a round dish. Add more coconut oil if necessary.
- Press the mixture firmly into a dish and store in the freezer for an hour.
For the filling:
- Soak the cashews in filtered water for 5-6 hours or overnight if easier.
- Next strain the cashews and rinse and add to a high speed blender with the remaining filling ingredients and blend until smooth and creamy.
- Pour the mousse over the base and return back to the freezer to set for 1-2 hours.
- When ready to serve, garnish with berries and coconut or nuts and seeds of your choice.
