Raw Chocolate Fudge Brownies

  • Makes 4 large brownies or 8 small

Ingredients

1 cup of pitted dates

1½ cup of Earth’s Bounty raw walnuts

3 tbs of cacao powder

2 tbs coconut oil

½ tsp vanilla powder or extract

good pinch of salt

Chocolate Icing

40g virgin cold pressed coconut oil, softened

¼ cup coconut milk or cream

¼ cup cacao powder

1 tbs raw honey, or to taste (use coconut nectar for Vegan)

¼ tsp vanilla power or extract (optional)

Method

    1. In a food processor combine dates, walnuts, cacao powder, coconut oil, vanilla and salt until mixture comes together.
    2. Spoon mixture into small dish or tray lined with baking paper and press into brownie shape.
    3. Put brownie into the freezer to set for 20 mins.
    4. For chocolate icing put all ingredients into a bowl and mix to combine. Be careful not to over mix, as it can split. If you find the icing splits, just add an extra tbsp of cacao powder and combine.  If icing is too runny, (it can get quite humid here in the Queensland summer, so this is often the case for me!) then put it in the fridge to slightly firm. You are after a softened butter consistency.
    5. Ice brownies and decorate with extra walnuts and some berries or cacao nibs.

     

    Store in an air tight container in the fridge. Let it sit out of the fridge for 10 mins, before serving, to soften the icing as it will harden when refrigerated. Best eaten within 3-4 days
