This easy-peasy quick recipe will have your mouth salivating in seconds, it’s slightly sweet yet tangy and refreshing and light. 15 minutes, 1 blender….done!!
- Serves 4
Ingredients

For the San Choy Bow
- 2 whole Carrots
- 3 stalks spring onions
- 3 stalks Celery
- 2 red apples (core removed)
- 1 cup Earth’s Bounty Raw Walnuts
- 1 handful fresh mint leaves
- 1 handful fresh parsley leaves
- Sprinkle Salt & pepper
- Sprinkle nutritional yeast flakes
To garnish- Half cup lightly toasted Earth’s Bounty Activated Sunflower Seeds
- 1 Avocado diced
- 1 baby cos lettuce broken into individual leaves to serve on
For the dressing- 1 lime, juiced
- 1 tbsp raw honey
- 1/4 cup tahini
- 4 tbsp tamari
- 4 tbsp macadamia oil
Method

For the San Choy Bow
-
Blend all the ingredients for the San Choy Bow into a high speed blender until a ‘mince-like’ consistency then set aside in a bowl.
For the dressing-
Blend all the ingredients for the dressing together until smooth and creamy.
To garnish-
Place the baby cos lettuce leaves on a plate, fill with the San Choy Bow mixture then garnish with avocado and toasted sunflower seeds finally drizzling the dressing over the top. Enjoy!!
